Bailey’s Irish Cream Brownies

Bailey's Irish Cream and walnuts add a little richness and a lot of Irish magic to your favorite boxed brownie mix in this recipe, perfect for your St. Patrick's Day celebration! The alcohol will evaporate during the baking process so these can work for kids as well. Top with cream cheese frosting for a perfect finishing touch!
Servings: 16 brownies
Course: Dessert

Ingredients

  • 1 box family size chewy brownie mix (9×13 pan size)
  • vegetable oil per box directions
  • eggs per box directions
  • Bailey's Irish Cream per box directions FOR WATER
  • ½ cup chopped walnuts (optional)
  • cooking spray
  • green decorating sugar to top after frosting
Frosting
  • 4 oz full fat cream cheese from brick (room temperature)
  • 4 Tbsp butter (room temperature)
  • 2 cups powdered sugar
  • ½ tsp vanilla (option to substitute Bailey's for the vanilla, but we are not cooking the frosting so the alcohol will remain if you make this 21+ substitution.)
  • 3 drops green food dye gel (optional)

Method

  1. Prepare brownies per box directions substituting Bailey's for water and adding walnuts if desired. Bake per box directions. Cool.
  2. Mix frosting ingredients with an electric mixer until smooth.
  3. Frost brownies and sprinkle with green decorating sugar.
  4. Enjoy!
