Try these bunny sugar cookies with royal icing for a fun Easter treat. The royal icing gives a beautiful satin finish and these are very sturdy and easy to package as a gift!

Bunny Iced Sugar Cookies

Method
- With an electric mixer, cream together butter and sugar until smooth.
- Beat in eggs and vanilla.
- Add flour, baking soda, and salt. Combine.
- Cover and chill for one hour.
- Preheat oven to 400℉. Line cookie sheet with parchment paper.
- Roll out dough on floured surface to ¼ inch thick with floured rolling pin. Cut into bunny shapes with a cookie cutter. Place one inch apart on cookie sheet.
- Bake 6-8 minutes. Cool completely before frosting.
- Combine ingredients with an electric mixer on high until soft ripples form and hold their form for five seconds (about two minutes). You can add more sugar if it seems to thin or more water if it seems too thick.
- Outline and flood the cookies with royal icing using a piping tip and decorator bag or sandwich bag with the corner snipped off. Add flowers and nose decoration. Allow to harden for about two hours or until totally dry. Use edible marker to add eyes. Enjoy!
