I modified a traditional midwest scotcharoo recipe to create these charming and whimsical scottie dog themed bars. I have had this idea floating around in my head for a few years and I couldn’t be more excited to finally share these little guys with you! When you get to the last steps and add their eyes and noses they really come to life with each displaying their own subtle facial expression!

- Line an 11×17 cookie sheet with parchment paper.
- In a large sauce pan over medium low heat, combine corn syrup and sugar until mixture becomes hot (not boiling though) and sugar is dissolved. Do not let it boil to keep the bars soft! Remove from heat. Add peanut butter. Combine. Add cereal. Combine being careful not to smash the cereal. Spread the mixture out on the lined cookie sheet to a thickness of ½ inch. the smoother you can get the top the better, you can use a sheet of parchment paper and your hand to smooth the top, but still don't smash the cereal! Melt the butterscotch chips in the microwave on 80% power in 30 second intervals stirring in between intervals. Spread a thin layer of the butterscotch over the top of the cereal mixture. Refrigerate for ten minutes to firm.
- Use a cookie cutter to cut out the scottie dog shapes. Place the cut scotties back in the fridge for five minutes.
- Melt the semi sweet chocolate chips and shortening in the microwave on 80% power in 30 second intervals stirring at each interval. The dab of shortening adds a satin smooth sheen to the chocolate and provides a great surface for decorating. Dip the top of each scottie into the melted chocolate and use a decorating knife or the flat side of a butter knife to remove the excess chocolate before flipping them right side up. Refrigerate for 10 minutes.
- Create the plaid sweaters with the decorating icing. Pipe the collars on and add a green sprinkle for the tag. Use the edible marker to add detail to a white sprinkle for the eye and to totally color a white sprinkle black for the nose! Stick the eye and nose on with a tiny amount of melted chocolate, use a toothpick. I know they're almost too cute to eat but enjoy because they are delicious too!
