Key Lime Cheesecake Cutie Pies

These adorable mini key lime cheesecake pies combine that bright and tangy citrus flavor with the richness of cheesecake that everyone loves. Add a little sunshine just the same to a cold winter day or a warm summer day!
Servings: 6 people

Ingredients
  

  • 6 mini ready graham cracker pie crusts
  • 2 8 oz bricks cream cheese softened
  • 14 oz can sweetened condensed milk
  • cup key lime or lime juice, can squeeze or buy
  • 3 drops green gel food coloring (optional)
  • 2 extra key limes to slice for garnish
Homemade Whipped Cream
  • 8 oz heavy whipping cream cold
  • 2 tbsp granulated sugar
  • ½ tsp pure vanilla extract

Method
 

  1. Beat cream cheese, sweetened condensed milk, lime juice, and gel food coloring on high until smooth and creamy, about three minutes.
  2. Add the mixture to the mini pie crusts. I used a decorating bag as a way to add the mixture neatly to the crusts.
  3. Add whipped cream topping and a key lime slice to each pie. Chill in the fridge 3 to 4 hours to set. Serve chilled. Enjoy!
Homemade Whipped Cream
  1. Whip all ingredients with electric mixer on medium speed until semi stiff peaks form when the beaters are lifted. The colder the cream is when you start the easier this will go. You can even chill a metal bowl to whip the whipped cream in if you're working in a warm room.
