Back to School Pencil Wafer Cookies

Decorate store bought sugar wafers and surprise your kids on the first day of school with these adorable pencil cookies!
Servings: 24 cookies

Ingredients
  

  • 8 oz package sugar wafer cookies
  • edible metallic silver paint
  • 12 oz package candy wafers white
  • 12 oz package candy wafers light pink
  • ½ cup semi sweet chocolate chips
  • food decorating paint brush

Method
 

  1. Use a sharp knife to cut the corners off one end of each sugar wafer to create the pencil shape. The sugar wafers are pretty delicate so handle each one with care. Place on a cookie sheet lined with parchment paper.
  2. Use the food decorating paint brush to paint the metal strip on each wafer with the edible silver metallic paint. You can paint under where the eraser will cover, so you just need the top end to have a neat line. Let dry.
  3. Melt the pink candy wafers per package directions. Dip each cookie in the melted pink candy to create the look of the eraser. Let dry.
  4. Melt the white candy wafers per package directions. Dip each cookie into the melted white candy to create the look of the sharpened end. Let dry.
  5. Melt the semi sweet chocolate chips in the microwave in thirty second intervals on 50% power stirring at each interval. Dip pencil tip to create the look of the pencil lead. Let dry. Enjoy!

Notes

My 8 oz package of sugar wafers contained 28 wafers. I noted a yield of 24 finished cookies for this recipe because some will break or be imperfect in other ways. Some may even be broken when you open the package! If you need a very specific number of finished cookies I would definitely buy a second package so there is no stress. They are quite inexpensive so there isn’t much to lose.
