Easy Tortellini Pasta Salad

This easy pasta salad comes together quickly and is packed with flavor and color! It's perfect for any outdoor gathering or to keep on hand for summer snacking.

Ingredients
  

  • 20 oz cheese tortellini
  • 8 oz mozarella pearls drained
  • 12 oz cherry tomatoes cleaned and halved
  • 8 oz Italian dry salami chopped
  • 4 oz baby spinach cleaned
  • 1 cup Italian vinaigrette dressing
  • kosher salt and black pepper to taste

Method
 

  1. Boil tortellini per package directions. Rinse with cold water to bring to room temperature.
  2. Combine all ingredints.
  3. Chill for an hour or so before serving. You may want to add a bit more dressing just before serving. Enjoy!
