Groundhog Day Chocolate Muffins

Will they see their shadows predicting six more weeks of winter, or will we have an early spring? Groundhog Day is February 2nd! These adorable groundhogs are peeking out of their holes, with winter snow on one half of each muffin and spring flowers on the other. I put these together on purchased chocolate chocolate chip muffins for a simple and fun Groundhog Day surprise!
Servings: 4 muffins

Ingredients
  

  • 4 large chocolate chocolate chip muffins
  • 4 milano style cookies
  • 4 brown chocolate coated candies (for noses)
  • 8 sliced almonds cut to shape (for ears)
  • 4 mini marshmallows or marshmallow bits cut to shape (for teeth)
  • black edible marker (for eyes)
  • 1 tube of white decorator icing
  • flower edible decorations
  • snow flake edible decorations

Method
 

  1. Lay out four cookies. Use icing to adhere almonds for ears, candy for noses, and marshmallow pieces for teeth. Add eyes with edible marker.
  2. Cut a slit in each muffin and gently push the cookie into the muffin.
  3. Use icing to adhere snowflakes and flowers. Enjoy!
