Peachy Keen Mini Cobblers

These individual cobblers are chock full of sweet and juicy peaches. They are baked in ramekins, small heat resistant dishes with high sides. The ramekins allow the cobblers to be served hot straight from the oven and create a classic presentation. A scoop of creamy vanilla ice cream is a perfect finishing touch!

Ingredients
  

  • 4 cups canned sliced peaches in 100% juice drained (2 15oz. cans)
  • 1 cup granulated sugar (divided)
  • 4 Tbsp butter
  • 1 cup all purpose flour
  • ½ cup sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • ½ cup milk
  • 1 tsp vanilla
  • 2 cups vanilla ice cream

Method
 

  1. Preheat oven to 350 F.
  2. Add 1 Tbsp melted butter to each ramekin.
  3. Mix drained peaches with 1/2 cup sugar in a bowl. Set aside.
  4. Mix dry cobbler ingredients in a bowl: flour, 1/2 cup sugar, baking powder, and salt. Add the wet cobbler ingredients: milk and vanilla. Blend.
  5. Divide the peach mixture into the four ramekins. Top each with the cobbler mixture.
  6. Place the ramekins on a cookie sheet in case of bubbling over. Bake for 30 minutes.
  7. Cool for about 5 minutes.
  8. Top each mini cobbler with a scoop of vanilla ice cream and serve. Enjoy!

Notes

If your sliced peaches seem too big you can cut each slice in half or thirds before adding the sugar.
These do come out of the oven very hot so make sure they are allowed to cool before serving, especially to kids.
